The “Bandeja Paisa”  is a typical dish in all the cities in Colombia, Generally consists in a portion of beans (With an ‘hogao’ spoon’ above) , dry white rice , ground food, ‘Chicharrón’ , blood sausage, green plantain, ripe plantain , a fried egg , and avocado slices , arepas , served all together in a tray.

How make the ‘Hogao’ :

– 2 onions.

– 4 scallions, into small pieces.

– 2 green tomatoes , peeled and chopped.

– 1/2 small spoon of thyme.

– 1/4 small spoon of tomillo.

– pepper and salt to taste.

– 2 spoons of oil.

Whole fry, stirring, until a smooth sauce.
